If you go by the most recent Community Impact update, Kouchan Ramen opens on West Parker Road in November 2026. The restaurant's own website gives a different date. Its header reads "Kouchan Ramen is coming to Plano in Dec 2026," and a few lines down it says "Opening December 2026 at 4709 W Parker Rd."
Both dates come from the same restaurant for the same storefront. Plano's late-fall opening list works the same way all over town. Opening dates this year have slipped later and moved earlier. The ones that have held up are tied to a renovation filing, a reservation book, or an event on a fixed calendar.
Four seasons of Kouchan Ramen
When it opens, Kouchan will be the first U.S. location of a Hakata-style tonkotsu ramen shop, at 4709 W. Parker Road, Ste. 440. Community Impact first reported it in July 2025, and the target has moved every few months since.
| Reported | Source | Opening estimate |
|---|---|---|
| July 31, 2025 | Community Impact | Spring 2026, with construction expected to finish in February 2026 |
| May 29, 2026 | Community Impact | Summer 2026 |
| July 10, 2026 | Community Impact | Fall 2026 |
| Sept. 9, 2026 | Community Impact | November 2026 |
| Undated, current | Kouchan Ramen website | December 2026 |
The September update describes physical work. According to a news release the restaurant issued, it had been working on exterior signage, permit approvals, interior construction and the kitchen. The menu has grown during the wait. Mazemen, a brothless ramen with chashu, menma, seaweed and green onions, is now planned alongside fried rice and karaage. Gyoza and two kinds of tonkotsu were announced earlier. If you've been following this one since it was a spring 2026 promise, the restaurant's website has a waitlist sign-up. That's a more reliable signal than any month printed in a headline.
Some dates move earlier
Kouchan's dates have only gone one way. Other places on the list have gone the other.
In July, Community Impact reported that the franchise behind a new Shipley Do-Nuts near the Plano-Frisco line planned to open "by early 2027." The Oct. 12 update moved that up to November, at 8245 Preston Road, Ste. 300. The store will be run as a franchise under The Shipley Group and will sell glazed and iced donuts, kolaches, coffee and rotating seasonal items.
Big Air Trampoline Park took a similar path, from no date at all to a specific one. Community Impact's April report on the 700 Alma Drive location said "Opening TBD" and expected construction to run from May through October. By September 18, the location owner was targeting early November. The park is going into the former Joann craft and fabric store on Alma, and it will be Big Air's first location in Dallas-Fort Worth. The chain's other Texas parks are in Houston and Missouri City. Plans include extreme dodgeball on a trampoline court and a foam pit kids can launch into. As of the Oct. 12 business roundup, early November was still the target.
Big Air's early-November target comes right after the October end of the construction window reported back in April, so the two dates fit together.
What a renovation filing adds
Bordeaux & Crème shows what's underneath a seasonal estimate. The wine-and-dessert concept is headed to The Shops at Legacy Town Center at 5840 Legacy Circle, Ste. D165, and its public date is "fall 2026." The Community Impact report adds a detail from a Texas Department of Licensing and Regulation filing: renovations on the roughly 40-seat space are expected to finish by November 2026.
That filing is the closest thing to a schedule the project has. Fall ends in late December, so "fall" leaves plenty of room. A build-out that wraps up in November narrows it. When it opens, the menu will include a Brulee Cheesecake with a brown butter sablé, a Pistachio Romance macaron with raspberry confit, and sparkling, white, rosé and red wines. Owner and founder Shanice Williams told Community Impact in a statement that wine and dessert "are capable of creating something truly memorable when they're thoughtfully paired."
The same shopping center shows how a filing can map out a storefront's next year. Samui Thai Cuisine, at 5700 Legacy Drive for 23 years, was set to close Oct. 24, and its website said it planned to reopen at another location, Community Impact reported. A Flower Child is planned for the space in early 2027, with facility changes expected to begin in December.
A soft opening marked TBD
Angel Touch Kitchen in east Plano shows how wide the gap can get between a target date and an open door. The halal Indonesian restaurant at 280 Legacy Drive, Ste. 300, started as a catering and community-event business in 2014 and ran a temporary location in Carrollton beginning in 2021. Owner Yenni Haryanti told Community Impact that slow-cooked beef rendang is one of its best sellers.
Here's how its dates have moved:
- Sept. 14: Community Impact listed "Opening late Sept/early Oct."
- Sept. 30: Plano Magazine reported that no opening date had been announced and inspections were scheduled.
- Oct. 12: The Community Impact roundup still had it under "Coming soon," listed for early October.
- Mid-October: The restaurant's own site listed an Oct. 15 event titled "Soft Opening New Store - TBD."
Inspections are usually the last step, and that step can take longer than a calendar allows. Check the restaurant's site or call ahead before planning a dinner around it.
Already serving, no estimate needed
While the November list waits, a group of late-summer openings is already running across Plano:
- Curry Tei & Bar, 1001 14th St., Ste. 100, downtown, soft-opened in early August with Japanese comfort food.
- ChaHalo, 6809 N. Central Expressway, Ste. 500, at Legacy Century Crossing, opened Aug. 21. It is the Xi'an-founded milk and fruit tea brand's first Dallas-Fort Worth shop.
- Diggers Cove, 7200 Independence Parkway, Ste. 238, opened Sept. 4. It's an indoor sand playground for kids 10 and under, with a remote-control construction zone.
- 10x10, at the same 6809 N. Central Expressway address as ChaHalo in Ste. 200, opened Sept. 12 with K-pop albums, stationery and crane machines.
- Pax & Beneficia, 5525 Granite Parkway, Ste. 150, opened Sept. 19. It's the Turkish-inspired coffee brand's second Plano café and ninth in DFW. Look for the Zahr, made with orange blossom and cardamom syrup.
- San Martin Bakery, 5500 Preston Road, opened Sept. 28. It's the Guatemala-based bakery's third DFW location, with breakfast, lunch and dinner alongside the pastry case.
The Henry at Legacy West was also on a fixed date. Community Impact listed its Oct. 21 opening at 7700 Windrose Ave., Ste. G200, on Sept. 30. The restaurant's Plano location page took reservations ahead of the opening, and The Dallas Morning News reported the same Wednesday date. A reservation book is a stronger commitment than a target month, and The Henry's specific day was public about three weeks ahead. The November date that won't move
One date on Plano's November calendar has a 31-year track record behind it. The Junior League of Collin County's ‘Neath the Wreath Holiday Gift Market runs Nov. 12 through 15, 2026, at Plano Event Center, with Ladies Night Out the evening before, on Wednesday, Nov. 11. Visit Plano lists it as Thursday through Sunday at 2000 Convention Center Blvd. As of mid-October, the organizer's ticket page said "STAY TUNED FOR TICKET LINKS & MORE INFORMATION!"
That gives Plano's November a fixed weekend in the middle and a few estimates around it. If Big Air keeps its early-November target, it opens before the market. Shipley and Bordeaux & Crème could land on either side of it. Kouchan's own site puts it in December.
We keep a running list of what's open, what's coming and what's moved across Plano's corridors as part of our Plano neighborhood guide.
